Red onions 2
Thyme or oregano
Cut the zucchini in 0,5 cm, 1/5 inch slices. Cut the red onions in rings. Slice the tomatoes (choose a firm variety).
Preheat the oven to 200ºC/400ºF/Gas 6
Grease an ovenproof dish with olive oil. Arrange the vegetables in neat rows alternating between zucchini, onions and tomatoes.
Sprinkle with the leaves of thyme or oregano. Sprinkle some olive oil over the top and pepper and salt.
Bake the vegetables in the oven for at least an hour but you can easily leave them in for 2 hours. Just check from time to time the top doesn’t burn too much. Your aim is to caramelize the vegetables slightly and the brown the top. If the vegetables brown too much or start to burn cover with tinfoil and lower the temperature of the oven.
